Let's Make The Pie Crust First!

Ingredients
114g Unsalted butter
148g All-purpose flour
Pinch of salt
40ml Cold water

Method
Cut the butter into small squares, place onto a small tray & into the freezer at least 10mins.
In a large mixing bowl add flour, salt & cold butter, Pulse them until it becomes fine grainy mixture (You can use a food processor for this). Add water gradually and pulse again until a dough ball forms.
Wrap the dough in a cling wrap by leaving a small gap between the dough & the wrap. Then press a bit to fill those gaps. Place the dough in the refrigerator to chill, refrigerate for at least 30mins - 1 hour. (dough should be cold when working)

Let's Make The Sausage & Egg filling!

Ingredients
2tbsp Butter
1 Medium onion diced
3 Garlic cloves minced
Salt to taste
5 Sausages diced
4 Medium eggs lightly beaten

Method
Preheat a saute pan over medium heat and add the butter. Once the butter is melting, add the sausages and saute 1-2 mins. Then add onion, garlic & saute another 2-3 mins. Then add salt, chili powder, pepper & cook for another few mins & remove the mixture from heat and allow it to cool slightly.

Finally the moment everyone waited for; Sausage & Egg Tartlets!

Method
Preheat the oven to 190C.
Take the pie crust from the refrigerator and unroll it over lightly floured work surface & roll the dough out slightly thinner by using a rolling pin. To cut the crust use a round shape cup or a cookie cutter that is slightly larger than the cups in your muffin tin. Collect the scraps and reuse them. Drop the rounds into the muffin tin moulds and using a small glass gently press the bottom.
Then fill the tart shells with the filling (don't press them to pack). And fill them with lightly beaten eggs.
Bake the tartlets 190C oven, for 20-30 mins.
Once them baked, allow the tartlets to cool down in the pan for 5-10 mins. Then use a spoon to take them out into a cooling rack to cool further.
Enjoy!
