Ingredients for the dough
60 ml Warm Milk (44°C - 47°C)
1/2 tsp Instant Yeast
1 Small Room Temperature Egg
1/2 tbsp Unsalted Melted Butter
1 tbsp Granulated Sugar
Pinch of Salt
96 g All-Purpose Flour (+ Extra Flour For Kneading)
Ingredients for the filling
1 1/2 tbsp Softened Butter (+ More to grease the pan)
13 g Granulated Sugar
1/2 tbsp Ground Cinnamon
Ingredients for the glazing
1 tbsp Milk
50 g Powdered Sugar
1/2 tsp Vanilla
Method
In a small bowl add 2 tbsp of warm milk, 1/2 tsp of sugar and yeast. Mix them and keep it a side for 10 minutes to active. After 10 minutes in a large mixing bowl add milk, egg, melted butter, yeast and whisk them a bit. Then add flour, pinch of salt, remaining sugar and stir in with a firm spatula or wooden spoon. Add more flour 2 tbsp at a time just until dough is no longer sticking. It should still feel slightly sticky but won't stick to clean dry finger tips. knead the dough by hand for 3 minutes. Cover with cling wrap and let it rise at room temperature for 1 hour, until doubled in size.
Generously dust a clean work surface with flour and turn the dough out onto the floured surface. sprinkle the dough lightly with flour and roll into even size rectangle, squaring off the sides with a scraper. Apply softened butter evenly all the way to the edges of the rolled dough.
In a small bowl, stir together sugar and cinnamon. sprinkle all of it evenly over buttered dough. Roll the dough up starting with one of the longer sides by keeping a tight roll. Once it's rolled up, slice into 8 rolls. Butter the sides and the bottom of a springform pan and arrange cinnamon rolls evenly spaced. Cover with cling wrap and let it rise at room temperature for 20-30 minutes. Preheat the oven to 177°C.
Brush the tops with melted butter and bake at preheated oven for 22 - 24 minutes or until tops are lightly golden.
After baking let them cool in the pan for 15 minutes. While it's cooling down make the glazing. In a small bowl add powdered sugar, milk, vanilla and mix them well.
After 10 minutes transfer the rolls on to a plate and drizzle the glazing on top.
